About the obsession
Liberty Burger Co is not a lifestyle brand that happens to sell sandwiches. We are a Chicago counter culture of smash, cheese, smoke, and spice documented in a board so long it needs its own page.
This about page is also long, because the story did not fit on a napkin, and we refuse napkin-length brands.
Two friends one who could cook a smash with eyes closed, one who could hand-letter a specials board without measuring opened a narrow shop where the rent was slightly less terrifying than downtown.
They agreed on three rules: never freeze a patty after the grind day, never hide a price, never put a burger on the board you cannot cook during Friday rush.
The first board had thirty-two burgers. Guests asked for more. The painter ran out of wall. The website became the overflow museum. That is how you get past one hundred builds without lying.
Today the crew still hand-letter rush eighty-sixes on a crimson wipe board by the pass. Digital follows when someone clocks out and remembers the laptop password.
Beef is ground in-house on a schedule you can ask about. Buns come from a bakery that still answers the phone. Pickles are brined until they snap. Cheese is sliced thick enough to matter.
We do not sous-vide a smash. We do not foam a ketchup. We do toast the bun in beef fat because flavor lives there, and because Liberty is not embarrassed by fat.
Spice lane items carry real heat. Ask for a milder swap. Breakfast window runs until 2pm or until the eggs run out eggs run out more often than pride.
Logan Square artists sketch the logo on our butcher paper. Night-shift nurses order Tower of Liberty like it is a sports drink. Parents split a Classic and a Plant build without a speech from us.
We hire for speed and kindness. We train allergen call-outs before we train fancy plating photos. Instagram can wait. The ticket cannot.
